It's nowhere near as good as the solution above, but a simple way would, of course, be separate drop-down elements for the hours and the minutes as in the attached example.

One could enter the figures manually in the Options box, but I chose to create text files for the options and putting them in the options-list folder ( mentioned under the heading 'Options' at https://www.coffeecup.com/help/articles/properties/ ).

OK, now for some more complicated info.
Can I somehow have the calendar read/write to/from a db so only available dates and times can be booked?

Unless some solution is provided, I would be inclined to search for "appointment scheduling software".

I'm having issues with the Calendar loading when returning to form.
You can submit the form and the date you selected will be unavailable.
I can't hear what I'm looking at.

Eric, yeah that's what I want, but, oh no the dreaded 'but'.
I probably wasn't as clear as I should have been, sorry.
So basically I have a teacher who wants to do online lessons and needs a form that can book a date and time that once booked would no longer be available to any subsequent students booking a slot.

That said with the example you've done are the dates getting written to a db or text file and the calendar looks to that to show the available dates?

Ok I think I have the script working correctly now.

The only thing is to adjust the days available in the calendar and what time slots are actually available.
You can test the output the way I have it.
Here's what I have for dates and times in my database so you can try it.
2022-05-30|07:15
2022-05-08|07:00
2022-05-22|07:15
2022-05-22|07:30
2022-05-14|07:45
2022-06-29|08:00
2022-06-24|10:00
2022-07-07|10:30
