Can I use a theme other than those available through CoffeeCup? If so, what characteristics must it have in order to be compatible with CoffeeCup? (I would be using VSD.)

You can only use VNU files with VSD so you must use CC themes.
CoffeeCup... Yeah, they are the best!

If you were using the html Editor, you could use any theme you may find out there.

With VSD, what components of an existing CC theme could be changed (navigation bar, buttons, etc.)? How easily?

You can change out everything. Just click on what you want to change. In some cases you get the 'Object inspector' box showing and you have to make the changes there.
