Hi Thomas,
Don't get to worried about the break points and designing for them. You can use Foundation and add your content. As you add it you only need to add additional break points if they are needed to keep things looking correct to you. I've built a few sites without adding any extra break points. I even built one where I only changed the layout at the 1024 break point. It's all about how it looks and also your primary user.
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

If I were you, Thomas, I wouldn't start messing with Grid either, not as long as you don't master the basics. Grid is ok for later, but because it is not visual (and you come from FrontPage which was very visual), it is tough for a beginner. Use flex positioning for now, then it will be easier to see what you are doing.
Ha en riktig god dag!
