So the response I get from the hosting service is this. I have no idea what the answers to these questions are or where to glen this information if someone can help here it would be appreciated.

Following up on my previous email - the error is referencing at least one thing that does not exist.

On reviewing your code, did you find any changes to the file or date stamps on the files?

What mechanism is it using to send, and via what relay server (this should be relay.hostinguk.net in most cases).

Given the errors being generated are odd, as they are referencing files that either do not exist, or log files that they have no access to directly - I would really need to know what mechanism was being used to send, and via what server, and what errors your code is generating.

There are no issues with the shared service involved, or the mail relays at this time, or recently - so this would be the way to progress this.

Also include any data used to send, along with the times to allow us to track through logs

Are there any error logs in the directory on the host?

@Eric: According to the hosting guys they say the error logs don't have anything from emails at all.

@Scott: No I haven't tried that yet, I am not sure I want to mess with it to be honest. I have more time into this than should be already when I know it's something on the hosting server that is stopping it from working correctly. I will look it over and see how much hassle it would be though and thanks for the info on it.

The hosting company says it's faulty code because it's trying to reference a file that does not even exist, which it is which we can't even figure out why it's trying to since I don't have anything setup to save anything online at all. But according to them it's a faulty form, and I know for a fact it's not... not sure how to look at this anymore lol.
