When you have selected the HTML5 video element, go to the Element pane, and where you see 'Poster', select 'Local Image'. Then find the image you want to use and select it. You should have selected the image first and popped it into your 'images' folder.

By the way Rocky
at the top right of the project there is a tab "Help Dialog"
if you open it. inside there is another tab for 'Video Tutorials" if you hit the button, that takes you to all of the CC video tutorials they have made,, Take your pick,,
The guides tab also opens the page with all of the guides they have written.(which is the one that Eric points you to)
