When Site Designer was released, the developers changed where everything was, and it seems that a lot of stuff got renamed as well.

Normally, I'm pretty good at finding where things got moved to, but it's a real struggle this time around. Making matters worse is the fact that there are A HUGE number of old tutorial videos out there that still do their demonstrations using the old buttons, names, and icons.

So to put it mildly, I can't find anything! Is there a change log I can review, or better yet, a "no thank you" preference that I can activate to bring me back to the "old UI" settings?

I'm sorry to ask this, but I'd like to get my website updated before 2029... :D

For now, I'd like to find the old screen that says "SEO" at the top and has Title, Header, and Footer sections.

It makes an appearance at 4:09 in this video:

This is the technique I'm trying to mimic to see how well it might behave for my site's users.

You look along the top menu bar for the tab"structured data" select it
Then select the tab "page manager" select it

There you will see all things pertaining to the pages
Scroll down a bit
There is a tick box "use global" this then will place anything you put on the page into the other pages when you tick the box.
If you don't want the other pages to have whatever you have then don't tick the box.

...and there it is. Thanks!

It looks like it was moved from New York to Boseman, so I don't feel quite so badly.

Not holding me back at the moment, but is there a list, description, or video on "what's changed"? If I can have a reference or cheat-sheet, then I can self-service.

And thanks again!

The 'Settings' pane was changed to Page manager when SD version 3 came along, and there have been various changes since that. I don't think there is any cheat-sheet for this. Your best bet is reading the changelogs that we get after (nearly) every new update.
Ha en riktig god dag!
