I meanwhile understand that I can only make a responsive menu for RSD with the menu builder app. That is fine, I understand how to get it there but...
On a mobile screen size I would like to have the icon option (just like the coffeecup theme) which is clickable. So far so good but HOW can I get the menu to fold out OVER the underlying text in a column instead of being added on top of it?

This will have to be done post export. It may be a good thing to ask for in the suggestions to make menu builder better.
I am not crazy good with customizing the css but thats what needs to be done here. You will have to find the css that controls the "Menu" title and set display:none; when it reaches mobile level. This should leave the icon in place.

I have done it by giving the HTML element a max height (about 50 px) in RSD. It becomes necessary to ensure the menu items are given a solid colour background (Note), as otherwise the text underneath shows through.

Note: Although it looks as if they already have a solid colour background by default in Menu Builder, I found there was in fact a transparent background. It was necessary to change them to another colour and back to white. FC

i am now struggling to get the menu in the center of the screen :-( Tried everything, HTML in a container with flexbox and centered, in a column etc but no luck so far :-( Menu seems to prefer the left of the screen

Try changing the menu style to remove the width restraint. If you have a fixed width of 720px i think is the default, it will align left. Then put all your menu buttons to center.
