So in the be-you-video-demo they have 7 break points, most of the other templates seem to have 4 or 5.

You only add what is necessary to keep you page looking correct at every width. There's no rule on how many but I still always try to design my pages to keep the number of them down.
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

Well there is a maximum of 10.
But Eric is right, Be-You is really a Demo as it shows the different ways you can resize a layout.
