Getting the error message "Can't open INSTALL.LOG file" so I haven't been able to uninstall the old version, has anyone else had this problem and found the solution?

I know I've seen that before, I actually think it happened to me a while back, but to be honest I don't recall what the fix was. I would highly suggest you open a support ticket:
Top menu > Support Mouseover > Your Support Room > Open a New Topic
This will get you to the people that can for sure help you with this as this is a user to user forum. Good luck on it and please come back and post what the fix was if you would so others that might have it can search the forum here for an answer.

I did open a support ticket, nothing suggested has worked so far, that's why I asked in the forum!
Thanks Keith, but tried both Workarounds and still getting the same error . . .
Well I would definitely suggest working with the support ticket as the forums here are mainly user to user help which most users won't be able to get down to the nitty gritty of your situation like the developers can.
Keep with it, I'm sure it will get worked out eventually.

Well, it was suggested that I use the automated cleanup utility and that did delete the old version and I was able to clear it out of the programs list from the control panel, however, it also deleted the projects file and I lost all the snippets I have accumulated so the new install is like a brand new installation. The projects are easy enough to repopulate just have to find all the directories that I had a project in, but I really wish I hadn't lost all the snippets!

Glad you got the uninstall worked out. As for the Snippets, try checking the documents folder and see if they are in the coffeecup area there. It used to install differently than it does now so it all got moved.
Once you find them just copy them from there to the new location within the:
c:\users\youruseraccount\appdata\local\coffeecup software\
location. Typed that from memory so I hope I got it right lol.
In the future I would suggest saving your snippets between updates as it has messed up a few people. Projects should be ok from here out though once you repopulate them.

Thanks Jo Ann, but nothing in the documents folder, I had them going to the coffee cup folder and I will definitely save these in the future, didn't think it would be an issue just to update since the instructions said it wouldn't affect anything, guess I should have known better!
