I'm using a theme that came with the software... and would love to be ableto put a copyright of SSE 2010 on there...but I'm wondering how I can do that with the coffee cup logo there. Can I shrink it...I realize that removing it from a theme is probably a big no no so if I shrink it but leave it there...would that be okay?

No, you can remove it. From there just add the text you want.
