I have inherited a company site and would like to edit it with VSD but is this possible and if so How?

No, You'll have to start over. It would be the best anyways as some older websites have content that isn't html5 compliant and you'll know the whole website by redoing it.
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

If I had that task I would download the images to a folder on my computer, also the text and do a screen grab of each page. Creating a folder for each page to keep this info.

VSD will certainly make the task easy and if you have saved that content it is a cut and paste affair. Updating a site is a must to keep up with current expectations so maybe more of the same is not the way to do it.
