Thanks to all the helpful folk on the CoffeeCup Forum who've been so generous with their time. I finally got my form working pinpointmarketer.com/Contact-Us.html and have purchased the full version of CoffeeCup Form Builder.
I hope these few notes may help someone:
To Avoid Revealing My Private Email Address
I'm not sure I can alter the auto response, but to hide my private email, I entered it under:
Edit --> Form Results --> Form Results --> BCC (rather than CC)

I discovered how to redirect my visitors after they've filled in my contact form:
To Direct To A Custom Page
Edit --> Form Settings --> Form Submissions --> Create a Custom Page
Best to create this in HTML so you can customise it
To Direct To A Website
Edit --> Form Settings --> Form Submissions --> Redirect to Website Address
Enter the website address

To Automatically Send A Message To Visitors Who've Submitted Your Form
Check "Send E-mail Auto Reply" on the right and construct your message.
To Return Info Your Visitor Submitted
Check "Send a copy of form results to user" at the bottom. Use the drop-down menue to determine whether the E-mail Auto Reply (i.e. the email you constructed) appears at the bottom or the top of the email.

I've had the same problem as yours - with contact form. Internet Explorer usually makes me angry

Hope the previous discussion proved useful.
My one remaining pain is that each time I upload something to the site, my contact form disappears in IE, making it necessary for me to again upload the HTML form created by correcting the IE code. This is most annoying. Hope someone comes up with a permanent solution.

What exactly is the IE code you correct? I don't believe this I'm aware of this issue (hopefully not a common one).

After clicking "View" --> "Source", I move the line of code as instructed. I then rename the source page so it has the same name as the part of the name of my web page appearing after the "/" (i.e. "Contact-Us.html") and, using FileZilla I upload it to my site. The form can then be seen in the IE browser; only problem is it disappears each time I add content to the site and click the "Publish My Web Site" button in my XSitePro site builder.
