Unfortunately, I'm quite certain there's no ability in VSD to create tables. However, if you have any other HTML editing software (such as HTML Editor 2008), you can create the table in there and copy/paste the table's code into your VSD page with the HTML Tool. A bit of a hassle, but doable.

As far as the drop-down menus question, are you referring to CoffeeCup's Flash Menu Builder? It doesn't seem to allow adjusting the height of the menu without doing some manual changes of the Height values in the HTML & XML files generated when saving the project.
