I am having trouble centering the css menu and the text that follows.
It's probably simple but I am not figuring it out.

The script for the menu should go within the header of the page not in
the body.

I took care of putting the menu in the head. Thank you. That took care
of the separating the headline from the menu but the menu is still not
centered. How do you center the menu?

You will need to adjust the padding for the position of the menu to fit
your design using divs and CSS.

I read the article and from what I got I used the following code within
divs:
Home
About Us
Tips & Testimonials
Swing Thoughts
Swing Feelings
Then in the menu-menu.css I place this code:
#content {
width: 800px ;
margin-left: auto ;
margin-right: auto ;
}
Attached is what the page looks like in Firefox preview.
The only issue I wanted to correct on the current web page is to center
the css Menu. This method created more problems...I am hoping it's a
simple error.

I actually got the menu to center...inadvertently saved the
menu-menu.css to the wrong place. Interestingly enough, A couple
headlines from the body are on lines above the menu and have moved
towards a logo there.
