Is there a way to control/change the tabbing order and the order in which fields are organized in the database?

You can switch columns locations within your cpanel in the php admin area.
You can add a tab index to your form elements with jquery.

No as the fields should go in the order they're on the page but I know for a fact that if you make a form with the formbuilder and submit it and then add more fields to it later they will be appended to the end of the table. Those can be reordered on the php admin of your cpanel but it's not necessary if your using a mysql select you can query the table and set them in any order.
