Is there a way to just have a simple text version of a confirmation email (to the person that submitted the form) and a email with the information that was submitted in the form (to the person that owns the site)?
All I'm seeing is the RED emails. Am I missing something?

While using RED does make creating emails easier, it is not required. Please see http://www.coffeecup.com/help/articles/ … /#edithtml where you can learn how to create your own custom HTML based email.
