Correct, the Reply To is the one that needs to be edited here. It should show the field label that you gave the email field when you created it so something like [email1] should show up in that drop down.
If nothing shows up at all, then check to be sure you haven't set the email field to hidden in any way with the "show" settings for the form as the email field is not allowed to be hidden at all.

Well I must be a total doofus all of a sudden because I see everything you refer to EXCEPT the name field in the drop down under "Reply-To" in the settings-->email notices. That is where the drop down is and it shows nothing. I checked the form options and there are no hidden fields and the email field is not a text field..it the "magical" option email address. I redid that just to make sure.

Delete the email address field on your form and add it back to the form. Make sure you are also using Build 5217.

Well I will try that again. I had the latest version installed but was having issues with that cuz nothing was publishing. I uninstalled it and put the one version before that back in.

Hope that works for you, and keep in mind that the hidden field I was talking about is about conditional fields which is part of the new program that we never used to have with the flash one. If you include the email address having any conditionals that will hide it at all then it will not show an email label in the drop down at all for the Reply To: part. If that's not what you did then hopefully redoing the email will fix that issue for you and now you know something about the conditionals that you didn't before :)
Well it seems to be fixed now. Reinstalling the latest version and readding the email field worked. and adding the little additon to the reply to field was no problem.
Tested it and all is well.
