Yes I know it's been mentioned before but the standard reply seems to be "The date/time are automatically recorded ...." but I would like to know what values we can use in those fields and I can't see it documented anywhere.

I think you can enter anything you want. Have you tried it?
I do know your not going to get scripts to run by entering them in the hidden field.
