I have not seen in the software a field for writing the subject of the mail received by addressee.

Is it possible to override the standard subject of the mail ?

Sure, that is very easy. Just go to Settings > Email Notices > Configure email message and for the subject, just add the Label Name there. So if the label name for the subject text element is [subject], just enter that.
