Where (in the Customize Notification Message) can I define the column widths in the body of the email? My 1st column is coming out very short and I'd like them to be about equal in width. I've tried several things but nothing seems to work.

Got it! Just added width: 50% in each of the td descriptions within the { }.

Unfortunately, the column width is negated when I have a long string of text in a check box value. Anyone know what the size threshold of this element before it screws up the column width? My client needs legal jargon in the submitted response so I can't just use a plain text box.
