I was thinking of using Web Form builder to create a form that would act like a spreadsheet. I am looking to track some sales items. The clerk would input for each item, what was yesterdays starting inventory, what is left over and the sold total would be computed my subtracting one from the other. Would this be possible using Web Form?

Yes with a little addition jquery you can do some math functions.
