In Settings-Confirm Email, I am unable to select a recipient variable from the "To:" drop down box. I created my own confirm email template.

I did add an email address element to my form. Hope I did that right. I have attached a screen shot.

I think you did what I did and added a text field. You need to use the magic email element.
