I am building a new custom design/cart from scratch for a client and they have asked if a Update Cart Button can be added to the shopping cart. Is there anyway to do this?

That is actually something you can do in Shopping Cart Designer Pro with a Pro Theme. Just go to the Button Properties Drop down and here you can customize the Update Cart Buttons.
