Here is a good start.

Other than the link SirAGE shared, it's all done manually. There are no tables that get imported for any of the tax or shipping stuff. You can probably do so using the Product Grid or export to a .csv file and add your information in a spread sheet and import it back in. Other than that I don't know of any easy way to do either of those things.
