How can I get my products to show up either by SKU# or by Title order?

Where are you trying to do this? There is no way to do this on the website it creates if that's what you're trying to do. There may be external scripts that others may have ideas that can be used to do this, but it's not a default feature of the carts at all. If you mean somewhere other than the site pages then please clarify your question a little further.
Items and categories/subs all show up in the exact order you have them in your list. You have the ability to move the categories up and down as well as reorganizing your products any way you like by dragging and dropping them to the spots you want them in. That's about the only organization there is.

You can also copy a complete product and paste it to speed up your product input. This way if your product shares similar Optional Fields, similar product information and such it saves a little time. Alter the image for the new item, change the title fields and any other things that need changing and half the work is done for you. Especially if you have a lot of products with the same Optional Fields choices.
Don't forget that you can move those categories and subcategories also by using the arrows on the right side of each one. If you decide to move a subcategory to a different category just right click that category ( I think that's how it's done, haven't looked in a bit ) and you'll get a menu on where to move it to. Pretty handy that too.
