1.) is it possible to us no currency symbol at all, or a custom symbol? I want to use Indonesian Rupiah (IDR) and the symbol is Rp.

2.) I don't want to use any of the payment systems provided. The only option shall be bank transfer. How to do this?

I don't know the answer to the currency symbol question, but the bank transfer question would be that there is no way to do this at this time. Right now the payment systems that are built into the programs are the only ones that are available to use. PayPal has the ability to take credit cards and debit cards without needing an account with them, I don't know if the others do or not. That is the only setups for payments there are as it is not customizable to put in your own setups.

In version 3.9 you can use any symbol you like. Just go to the Your Shop tab and at the bottom you can use a custom currency symbol.

A possible work around until CC expands it's payment systems. Publish the CC Shop as a catalog (this will not publish CCShop cart) and link with the add to cart buttons to Mal's eCommerce shopping cart. Mal's support 50 plus payment systems (I don't know that any does - but may be, one of the systems will do what you wish). So check Mal's http://www.mals-e.com/processors.php

I have published a couple of small shops this way to enable using additional payment processes. Admittedly, a work around, not optimal but is doable.
