When entering products, am I able to enter my own 'SKU' number or should I let SCCP generate it for me and leave it? I have searched the Forums and Help for this and I'm thinking that I can change it, but I'd rather ask first.

If I can change it, are there any ramifications of changing 'SKU' numbers for exisiting products?

You can change those numbers to anything you like, I don't believe there are any ramifications for changing them at all. The only limit you have there is the number of characters that can be used which at this time is limited by Paypal and such payment processing systems that limit the number of characters that can be submitted with the order. Other than that happy SKUing
