I just bought Designer and Creator Pro. Do I have to download both and if so, will it delete all the work that I have done thus far in the trial version(s)?

Save your shop files, then install the paid versions and you should be fine. Might want to copy the saved files if you have them saved in a CC directory and put them in another location to be safe, but I don't think it's necessary, I usually do that just as a precaution. (not the files that get uploaded as a shop, but the files that you use to edit your shop)

When you upgrade from SCC to PRO will it keep my content?

Yes it will keep things as they are, you will need to update the themes to the Pro versions to be able to get the benefits of them, but other than that your content is fine.
