I need some collective wisdom because the answer isn't in the manual and not immediately obvious. How and where do I add Google Analytics code to a product page?

Place it in the footer area.
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

The footer area inside the program he means. There is a setting in your Shop settings that you can put things in the footer, that's where that goes, not on the page footer itself.

Use direct ftp to upload them to S-Drive. I would place them inside a dedicated folder to make it easier to keep track of.
