Okay that's enough butchery of poetry. On to the problem.
We prefer to use two different email addresses with our website. The first is the email address we use with our payment processor, paypal. The second is the email address we use for interacting with our customers.
I can see where to add the email address we want to use with paypal. But I don't see any place where I can set a "from" email address.for any emails generated from SCCp. I am wondering if I am overlooking something simple.

Shopping Cart does not send any emails. Those come from the merchant. If you want to use a different email address, you would change that inside of PayPal.

If you want your customers or potential customers to contact you using a different email than the PayPal one, then you'll want to create a Contact Us page on your shop and put the information in there as well as a contact form that you can create using CoffeeCup's great Web Form Builder. Hi Scott - Are you quite sure on that for the pro version? Having looked at this a little more I noticed two things:
1.) there is a file in the phppro directory called class.phpmailer.php and there are other files as well that would seem to be there to support sending email (e.g., class.smtp.php)
2.) When running servertest.php, I get an error message about sendmail_from not being set in php.ini.
Jo Ann - Thanks for the suggestion. We already have that. But I need to be sure whether the product is intended to send any messages or not because if it sends any messages then I need to be sure it is configured correctly.
