I wonder if it is possible to download a shop from the server back into
the coffee cup shopping cart software rather than re build the shop?.

If you FTP into your server, there should be a folder with all your backup XML files. These are what are needed to import back into SCC. You can then re-download all your images and re-add them to each product.
