Is there the ability to set such things as default font for the entire project instead of needing to set it on each element on each document.

Mark,
You can set the font to be the same as another element by assigning a class.;)
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

Thanks Eric

I guess I was referring to maybe just the font family. Looks like in the coffeegrinder.min.css file the font family for the project is set as

blockquote,body,button,dd,div,dl,dt,form,h1,h2,h3,h4,h5,h6,input,li,ol,p,pre,select,td,textarea,th,ul{color:#222;direction:ltr;font-family:"Helvetica Neue",Helvetica,Helvetica,Arial,sans-serif;line-height:1.6}

Would be nice if I could change that for the entire project without assigning a class.

I see what your saying
Alter it after export. You'll need to add the rest of your content and will be opening it up in a html editor anyways and you already know where to change it.;)
