There's an aspect of copyright that I'm not sure of - for example if I have a document that's unchanged for more than a year, should I update the copyright notification to the current year, or leave it as is?

I would say use a fixed date for a document that is static. If there's on going updating then I would use the creation date and the current date as a span or just the current date. What ever you think looks best. The date span doe's show users how long the doc has been active. This could be great for a game of trivia pursuit.
