is it possible to convert (and how) a website into a mobile version - for better viewing with iPhone
or other smaller displays ?

Yes you can convert them. It's as simple as opening the webpage and editing it as you usually would but with minimal content and smaller screen resolution in mind. It probably would be easier to just start off with a clean slate. This page should help get you rolling.
