If go into the config php and set the from as just an email then that email will appear as the sender.
However, if I input Bob Smith <info@email.com> then the email will appear as bob@email.com why is that?

You don't need to alter the scripts. Enter into your settings in the form builder.

Yes i'm aware I can enter it in the form builder as well. However, entering it in either place in the format Bob Smith <info@domain.com> does not have the desired effect.
The email reads as from bob@servername.hostingcompany.com however if I enter only an email info@email.com then it sends from that email.

You need to enter just the email address in the From field of the settings. I don't believe you can put the Name in also if I recall correctly. You do that for the drop down lists, but I don't think it works that way in the From fields of the form settings. just add:
david@mysite.com
