SCCPro option menu is listing choices...

I am about done with my shop and website. They look awesome!! (Thank you CoffeeCup!)

However, I listed many options in each drop down menu of various products and I listed them that way on purpose so the customer can easily find the most logical option for that product. But when I upload the site and view it, the choices in the options list are very randomly listed in the drop down menus. Why?
How do I prevent that?

The only thing consistant is when I placed these ** at the beginning of the word **NONE and that kept the word NONE at the top of each drop down list. But the rest are all random. I need it to be more consistant. I also know about moving the options up and down within the list and have done that when I added a new choice but even that comes up in an odd location within the list.

What do you recommend?

Can you provide the list your using for your options for us to test?:)
I can't hear what I'm looking at.
It's easy to overlook something you're not looking for.

And they should be in this exact order but they are when viewed online.

Earth
Air
Water
Metal
Wood
Aries
Taurus
Gemini
Cancer
Leo
Virgo
Libra (Venus Ruled)
Libra (Juno Ruled)
Scorpio
Sagittarius
Capricorn
Aquarius
Pisces.

I have over 80 options. But no matter how long or short the list, it keeps getting out of order. It is fine within the drop down menus of the web forms though. The only time it stays in order is when there are only two options.

Now this is coming to conclusion, I'l bet its because there are so many options to choose from

Also i wonder if the likes of Paypal will suffer and cause errors when they send the SOLD item description details

I still have an issue with Paypal only partially giving me details on products where all 5 drop downs have been used

So as Eric says, please add more detail here when you have it, I for one want to know :)
