I have been using the SCC and just bought the SCCPro and downloaded it. Should I delete the SCC now that I have the Pro??

That's entirely up to you. I did. Though I kept the installation file ( for SCC) just as a precautionary backup. SCCP does everything SCC does, plus a whole lot more! Should be all you need.

With that, I'd backup any cart files you have, just to be on the safe side. You can never have to many backups!
