Is there a way to put text at the top of each category section? I would like to be about to a paragraph or two of general information about the type of products in each category.

Yes there is. I suppose that might depend on what theme you have chosen of course, but I have managed to add some next to mine...
Here is an example from my site

You do this by clicking on the category bar in the SCC Pro and then click on the product details tab. That is where you can add the category information. Of course the same applies if you want some information for the sub-categories too.

Mark... you can also add some information at the top of the categories page, but it will open up with all categories and not be specific to one only... which is why the other method I described seems more appropriate for the needs you specified. To add general information to that page, click on the pages icon in the toolbar as opposed to the products icon.
