I am wondering is it possible to have the Live Chat on two wensites and be able to monitor both site at the same time. Can you have two control pannels open or will it just work with one at a time.

I see no reason you can't have 2 live chats-different sites open at the same time. I have done that myself.

Well I would like to know how you are doing that. I cannot get but one instance of Live Chat open on my computer at any one time. That instance allows me to login to one live chat room but never two.
Please share your secret ... if you can do it.
I have tried and am unable.

Agreed originally I could have more than one open but now I find that the editor checks to see if another copy is open if so then it just shuts down.
Also do you have knowledge if its possible for more than one operator to work at the same time without it causing issues as I have managed to get it so we can have 3 people logged in to provide support but I'm unsure what effectthat has on the system so I have stopped attempting it just incase of issues

you may want to try setting up an additional account on your computer and running the program by another user. "those of us that are on the ball" -- understand this technique will allow you to run multiple programs w/o conflicts.
